LAS VEGAS (FOX5) — More than a ton of dark chocolate and thousands of pounds of sugar have transformed ARIA Patisserie into a massive, edible autumn forest.
Casino officials have debuted “Autumn Atelier,” an elaborate, edible fall display now open at ARIA Patisserie through Sunday, November 8.
Designed by Executive Pastry Chef Mathieu Lavallee and his team, the installation turns thousands of pounds of chocolate and sugar into an enchanted autumn forest, complete with fondant gnomes, a chocolate pumpkin patch, and sugar-crafted foliage.

“Our objective was capturing the true spirit of autumn through edible artistry,” Lavallee says.
“This exhibit serves as an immersive invitation to relish the time of year, complemented by a specially crafted menu at ARIA Patisserie, designed to elevate every visitor’s journey.”
In total, the display features:
- 2,250 lbs. of dark chocolate sculpted into a centerpiece tree
- 250 lbs. of handmade chocolate pumpkins
- 200+ lbs. of edible chocolate soil
- 150 lbs. of blown-sugar flowers and 150 feet of sugar vines
- 50 lbs. of chocolate river rocks and 8 lbs. of chocolate acorns
- 40 sugar butterflies, 30 lbs. of sugar mushrooms, and 20 lbs. of sugar autumn leaves
- 4 handcrafted fondant gnomes
ARIA Patisserie is located on the casino floor inside the ARIA Resort & Casino and is open 24 hours a day.
