LAS VEGAS (FOX5) — Rio Hotel & Casino has opened a Mexican cuisine and cocktails restaurant.
Signature dishes at Tacos Del Rio Cocina & Bar, include Birria Tacos, Queso Fundido, Chile Relleno and a two-pound burrito prepared with birria, chicken tinga, shrimp or vegetables.
“Tacos Del Rio is about taking the flavors people already love and elevating them through technique, freshness and bold combinations,” said Chef Andi Van Willigan.
“We wanted to create something that feels familiar, but delivers a more vibrant and memorable experience every time.”

Tacos Del Rio Cocina & Bar is open Thursday through Sunday from 4 p.m. to 10 p.m. More information is available online.
